Many years ago in early spring we would trudge through the woods in mud and slush, tapping trees with metal spiles and hanging old metal buckets. It was always exciting to see the first few drops of sap fall from the spiles in the beginning of maple season. For weeks as a family, we worked hard and emptied all those buckets of sweet sap in rain or shine. We sold gallons to local sugar bushes so they could be transformed into sweet Pennsylvania maple syrup along with other sweet goodies such as cream and candy. Over time, we traded in the metal buckets for sap lines. Two years ago was when we bought an evaporator to make the syrup ourselves. Last year we invested in a reverse osmosis machine which removes excess water from the sap, cutting the boiling time in half! This year we are excited to annouce our very own sugar bush called Creekside Maples. We hope you enjoy our maple products as much as we have making them for you!
